½ pound fresh Florida shrimp, peeled and deveined (tail on)
2 tablespoons Florida seafood seasoning blend, divided
1 medium sized loaf French bread, cut in half lengthwise
1 stick unsalted butter, softened
1 tablespoon olive oil
2 tablespoons garlic, minced
2 cups mozzarella cheese, shredded
½ cup Parmesan cheese, grated
½ lemon, juiced
3 tablespoons fresh herbs (parsley, oregano, thyme), chopped fine
Sea salt and fresh ground pepper, to taste
Pre-heat a large sauté pan over medium-high heat. Use a paper towel to dry the peeled shrimp as much as possible. Carefully add the olive oil and peeled shrimp to the pan without overcrowding. Season the shrimp with 1 tablespoon of seafood seasoning blend and sear for only 2 minutes. Quickly remove from pan onto a plate to cool. Drizzle with the fresh squeezed lemon juice.
Pre-heat oven to 375 degrees. Spread softened butter over each cut side of bread loaf and season with 1 tablespoon seafood seasoning blend and minced garlic. Add shredded mozzarella and shrimp to top of bread halves. Sprinkle parmesan cheese and chopped herbs over shrimp and bread. Bake for 4 to 6 minutes until the cheese is melted and bread toasted. Remove bread from the oven and let cool slightly. Slice into serving portions and garnish with extra sliced lemon and fresh herbs. Serve warm.
