4 (6 to 8-ounce) Florida spiny lobster tails, cut in half lengthwise
2 tablespoons Florida seafood seasoning blend, divided
¼ cup Florida red bell pepper, diced fine
¼ cup green onions or scallions, sliced fine
2 lemons (1 juiced and 1 quartered)
1 tablespoon fresh herbs (parsley, oregano, thyme), chopped fine
1 tablespoon fresh garlic, chopped fine
1 teaspoon crushed red chili flakes (or to taste)
2 tablespoons quality olive oil
2 tablespoons butter
Sea salt and fresh ground pepper, to taste
In a small mixing bowl, add olive oil, 1 tablespoon seafood seasoning blend, red bell pepper, scallions, juice of 1 lemon, garlic, herbs and red chili flakes. Stir ingredients to combine and adjust seasoning with sea salt and fresh ground pepper to taste. Set aside.
Preheat the oven to 400 degrees. Skewer each lobster half down the middle with a medium-sized wooden skewer and season with 1 tablespoon seafood seasoning blend.
Preheat a large, ovenproof sauté pan over medium-high heat. Add butter and place skewered lobster halves in pan seasoning side-down to cook for 2 to 3 minutes, until seared. Flip over each tail half and place the pan in oven. Cook lobsters for 2 to 4 minutes, until just done. Remove from oven and place on a platter. Spoon the topping mixture over lobster tails and garnish with seared lemon halves if desired.
