¾ cup Florida Key lime juice
1 tbsp lime zest
1 tbsp lemon zest
1 tbsp orange zest
28 oz sweetened condensed milk (2 cans)
2 cups crushed graham crackers
⅔ cup butter, melted
⅓ cup shredded and sweetened coconut flakes, toasted
1 cup Florida dragon fruit, peeled and diced
1 cup Florida mango, peeled, seeded and diced
1 cup whipped cream
¼ cup white chocolate, grated
Sprigs of fresh mint, for garnish
Slices of Florida Key lime, for garnish
Combine the sweetened condensed milk, Key lime juice and all the citrus zest in a medium-sized mixing bowl. Stir ingredients and cover. Let chill in the refrigerator until use.
In a small mixing bowl, combine the crushed graham cracker crumbs, melted butter and toasted coconut. Stir well and set aside.
Line up 10 to 12 dessert bowls. Equally distribute the crumb mix into the bottom of the bowls. Spoon the chilled lime filling over the crumbs and add equal portions of dragon fruit and mango to each bowl. Top with a dollop of whipped cream, grated white chocolate, a mint sprig and a lime slice. Serve cold.
