8 slices whole-grain bread
¼ cup Florida cucumber, trimmed and sliced thin
4 Florida radishes, trimmed and sliced thin
1 large Florida tomato, cored and sliced thin
¼ cup Florida carrot, shredded
¼ cup red onion, sliced thin
¼ cup Florida avocado, peeled, seed removed and sliced
8 leaves Florida lettuce (romaine, leaf lettuce)
¼ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh garlic, minced fine
2 tablespoons fresh herbs (thyme, oregano, basil), chopped fine
2 teaspoons Florida all-purpose seasoning blend
½ lemon, juiced
2 tablespoons parmesan cheese, grated
1 or 2 dashes Florida hot sauce (if desired)
Olive oil for drizzling
Sea salt and fresh ground pepper, to taste
Drizzle both sides of each of the 8 slices of bread with olive oil. Toast the slices in a toaster or oven. Set bread aside for assembly. In a small mixing bowl add the mayonnaise, Dijon mustard, finely chopped garlic, chopped herbs, seasoning blend, parmesan cheese, lemon juice and hot sauce. Mix ingredients well and adjust seasoning, to taste, with sea salt and fresh ground pepper.
Assemble the sandwiches by evenly layering the herbed mayo, lettuce and vegetables in-between the toasted bread. Lightly season the vegetables with sea salt and fresh ground pepper. Drizzle with olive oil and add extra herb mayonnaise if desired. Use a sharp knife to cut each sandwich in half. Serve immediately.
