Florida Grouper Fajitas

servings 4

Ingredients

1 pound Florida red grouper fillet

8 to 10 mini Florida sweet peppers (assorted colors), sliced into thin rounds

2 tablespoons olive oil

2 tablespoons unsalted butter, cubed small

2 tablespoons Latin seasoning blend or taco seasoning, plus more to taste

2 large Florida tomatoes, diced small

½ red onion, diced small

¼ cup fresh cilantro, rinsed and chopped

1 ½ limes, juiced (plus more wedged for garnish)

8 flour or corn tortillas

1/2 cup sour cream

Sea salt and fresh ground pepper, to taste

Preparation

In a mixing bowl, combine tomatoes, onion, cilantro and lime juice.  Season with sea salt and fresh ground pepper to taste, then set aside.

Pre-heat oven to 425 degrees. Place the grouper fillet in the center of a baking sheet lined with parchment paper. Arrange sweet pepper rounds on top and around the sides of the fish and add seasoning blend. Drizzle everything with olive oil and place butter on top of grouper. Cook for 14 to 16 minutes until grouper is just cooked through and the peppers are charred in places. Remove from oven and let cool slightly. Use a fork to flake open grouper and garnish with lime wedges. Serve with flour or corn tortillas, tomato salsa, and sour cream.
