1-pound whole Florida carrots, peeled and trimmed (if large, cut in half lengthwise)
¼ cup Florida hot honey
1 tablespoon fresh garlic, chopped fine
1 lemon, zested and juiced (plus more wedged for garnish)
2 tablespoons quality olive oil
1 tablespoon Florida all-purpose seasoning blend
2 to 4 sprigs fresh thyme, leaves removed from stems (plus more for garnish)
Pre-heat oven to 400 degrees. In a medium sized baking dish, toss the carrots with the hot honey, olive oil, garlic and seasoning blend to coat. Bake carrots in oven for 25 minutes, flipping them halfway through the baking process. Carrots should be mostly cooked throughout the thickest parts. Remove from oven when the desired tenderness is reached and let cool slightly at room temperature.
After carrots have cooled, place on a small platter and top with fresh squeezed lemon juice, thyme leaves and lemon zest. Generously drizzle extra hot honey over carrot dish. Garnish with fresh thyme sprigs and lemon wedges.
