2 ciabatta bread rolls, sliced in half
2 medium-sized Florida bell peppers (your favorite color)
1 tablespoon olive oil
2 teaspoons fresh herbs (oregano, thyme, parsley), chopped fine
1 teaspoon all-purpose Florida seasoning blend
4 ounces fresh mozzarella cheese, sliced
4 to 6 large and fresh basil leaves
Mayonnaise, if desired
Sea salt and fresh ground pepper, to taste
Preheat the oven to 375 degrees. Slice peppers in quarters. In a small bowl, toss in olive oil, sliced peppers, seasoning blend, salt and pepper. Bake the peppers on a cookie sheet for 8 minutes. Remove from heat and let cool.
On the same cookie sheet, lay out the 4 ciabatta bread pieces. Add a thin layer of mayonnaise to each ciabatta half. Top each bread half with sliced mozzarella cheese, chopped herbs and all-purpose seasoning blend. Place the sandwiches back in the oven for 4 to 6 minutes, until the cheese is melted and bread is toasted. Remove the sandwiches from the oven and let cool slightly.
To assemble, add an even amount of the roasted pepper to 1 side of each sandwich. Add the fresh basil leaves and lightly close the sandwiches with a top and bottom. Serve warm.
