½ pound Florida tuna loin (sushi-grade), trimmed
1 tablespoon Florida all-purpose seasoning blend
1 tablespoon olive oil
¼ cup scallions or green onions, sliced for garnish
1 teaspoon sesame seeds (black and white)
¼ cup Korean BBQ dipping sauce (or your favorite dipping sauce)
Sea salt and fresh ground pepper, to taste
Preheat a large sauté pan over medium–high heat and add 1 tablespoon of olive oil. Generously season all sides of the tuna loin with all-purpose seasoning blend. Place onto pan and sear all sides of the tuna loin for no longer than 20 seconds, each side. The goal is to have a crispy sear on the outside and rare on the inside. Remove tuna from pan and place on a plate with a paper towel. Let rest in the refrigerator for 15 minutes before slicing.
To serve, slice tuna with a sharp knife and arrange on a plate. Garnish with sliced scallions and sesame seeds. Serve cold with dipping sauce.
