½ pound Florida cucumber, washed and ends trimmed
½-pound Florida snap beans, trimmed and blanched
½ cup red onion, slivered fine
¼ cup fresh cilantro, rinsed and chopped rough
½ cup scallions or green onion, sliced fine
2 teaspoons natural Florida sugar
1 ½ tablespoons toasted sesame oil
1 tablespoon sesame seeds (black and white)
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon fresh garlic, minced
½ lime, juiced (plus more wedged for garnish)
1-2 tablespoons chili-garlic crunch, to taste
Sea salt and fresh ground pepper, to taste
In a medium mixing bowl add sugar, toasted sesame oil, sesame seeds, soy sauce, rice vinegar, minced garlic and chili-garlic crunch. Use a whisk to mix ingredients thoroughly.
On a clean cutting board cut each cucumber in half. Lay a large knife flat against each cucumber half, and one at a time carefully split and smash them with your other hand (like smashing garlic). The cucumber should break open and smash into sections. Repeat this process until all the cucumber is smashed. Cut smashed cucumber into bite-sized pieces.
Add cucumber, blanched snap beans, slivered red onion, sliced scallions and cilantro to dressing mixing bowl. Toss ingredients to coat. Adjust seasoning, to taste, with sea salt, fresh ground pepper and extra chili-garlic crunch, if desired. Serve salad cold in a serving bowl. Garnish with lime wedges.
