1-pound whole Florida carrots, peeled and trimmed (if carrots are large, cut in half lengthwise)
1 tablespoon blackened seasoning blend
1 tablespoon Florida all-purpose seasoning blend
2 tablespoons quality olive oil, plus more for drizzling
⅓ cup plain Greek yogurt
1 lime, zested and juiced
1 tablespoon fresh garlic, chopped fine
Fresh parsley, for garnish
Pre-heat oven to 400 degrees. Place carrots on a baking sheet and coat with olive oil and blackened spice. Bake carrots in oven for 25 minutes, flipping them halfway through the baking process. The carrots should be mostly cooked throughout the thickest parts. Remove from oven when the desired tenderness is reached and let cool slightly at room temperature.
In a small mixing bowl, combine yogurt, lime zest, lime juice and all-purpose seasoning blend. Mix well.
Spread yogurt sauce evenly to bottom of a small platter. Add carrots to top of the yogurt sauce and garnish with parsley. Lightly drizzle with olive oil. Serve warm.
